My mind was blown
when I realized that I could take something that I have only had at family parties or nice (or any for that matter) Italian restaurants and make it as a snack during my two hour break between classes.
I am talking about bruschetta.
Not only is this snack, nutritious and delicious... it only takes about 10 minutes to prepare.
Its not everyday that I sit down and think that bruschetta would be a fast or fulfilling treat, but my friends you would be surprised. It is simple and quick with these steps:
Ingredients:
Italian/French bread
1 tomato
1 onion
basil
salt
pepper
olive oil
parmesan cheese
1. Cut up the bread into tiny pieces and stick them in the oven or toaster oven for about 5-10 minutes.
2. While the bread is toasting- chop up your tomato, onion and basil into small pieces and throw them into a bowl together.
3. Add your olive oil, salt, pepper and parmesan cheese.
4. Lightly toss all the ingredients together in the bowl, mixing them together.
5. Put a spoonful of bruschetta on each of the toasted bread pieces.
